Ultimate CBD Chocolate Chip Cookies

Ever craved a treat that combines the nostalgic comfort of homemade cookies with a touch of wellness? Say no more!
These chocolate chip cookies are a delicious classic: soft and chewy in the centre with lovely crisp edges, and of course infused with CBD's goodness. This recipe contains 5mg of CBD in every cookie and is a tasty way to enjoy a little dose of wellness inside your favourite snack. Just remember to enjoy responsibly and savour every bite!
Ingredients:
- Butter: 1/3 cup (75g), unsalted & softened
- Granulated sugar: 1/4 cup (50g)
- Brown sugar: 1/4 cup (50g)
- Vanilla extract: 1/3 teaspoon
- Egg: 1/2 (beat one egg and use approximately half)
- All-purpose flour: 3/4 cup (93g)
- Baking soda: 1/3 teaspoon
- Salt: pinch
- Chocolate chips: 2/3 cup (115g)
- Nuts (optional): 1/3 cup (33g), chopped (e.g., walnuts or pecans)
- CBD oil: Total 60mg (volume depends on the concentration of your oil)
Instructions:
Prep: Preheat oven to 150°C. Line a baking sheet with parchment or silicone mats.
Wet mix: In a large bowl, beat together butter, both sugars, vanilla, and CBD oil until smooth. You can use either an electric mixer or a spoon.
Add egg: Beat in half an egg, ensuring it's fully mixed in.
Dry mix: In a separate bowl, whisk together flour, baking soda, and salt. Gradually stir into the wet mixture.
Stir in extras: Fold in chocolate chips and nuts, if using.
Shape: Drop rounded tablespoons of dough onto the sheet, leaving a good amount of space between each cookie.
Bake: 20-25 minutes, or until golden brown.
Cool: Let cookies rest on the sheet for a few minutes, then transfer to wire racks.
Store: Once cooled, keep in an airtight container.

How to store chocolate chip cookies
If you (somehow) find yourself with any leftovers then make sure you keep them in an airtight container. Keeping them at room temperature will help to retain the flavour and texture compared to storing in the fridge - just make sure you consume them within three to five days.
You can also freeze your homemade cookie batch for up to 2 months. Make sure you separate them with some wax paper before popping them in a freezer bag. When you want one, just leave it covered at room temperature to thaw out and enjoy!
